Gluten-Free Hamburger Buns
  • 2½ cups Baking Free gluten-free all purpose flour
  • 1 teaspoon xanthan gum
  • 2 tablespoons oil
  • 1 cup warm milk--110 degrees (I used almond milk)
  • ¼ cup sugar
  • 2¼ teaspoons yeast (1 envelope)
  • 1 teaspoon salt
  • ¼ cup butter (melted and cooled to room temperature)
  • 2 eggs
  1. Combine warm milk, sugar and yeast in bowl, set aside for about 10 minutes. It will get bubbly.
  2. Combine flour, xanthan gum and salt in large stand mixer bowl.
  3. With mixer on low, gradually add yeast mixture to flour until it combines.
  4. Add butter, eggs and oil. Beat until well mixed, scraping bowl occasionally.
  5. Increase speed and beat for about 3 minutes until batter is very smooth.
  6. Prepare baking sheet with parchment and 5 English muffin rings. Spray with baking spray or oil.
  7. Put a scant ½ cup of batter in each ring. Put a little hot water in a cup and stir with spoon. Using the back of the damp spoon, smooth the top of each bun.
  8. Loosely cover with greased plastic wrap and a clean kitchen towel. Place in a warm spot and let rise for about 30 minutes . Buns should be above the top of the rings.
  9. Heat oven to 350 degrees F. Remove covering and bake about 30 minutes or until tops are golden brown.
  10. Let buns rest on baking sheet for a few minutes to cool slightly. As soon as you can handle them, remove the rings. Cool completely on baking racks. Makes 5 hamburger rolls.
