Banana Nut Muffins
 
Ingredients
  • 1½ cup Baking Freeā„¢ Gluten-Free all purpose flour (124 g per cup)
  • 1 cup sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 bananas (medium, ripe)
  • 1 egg
  • ⅓ cup canola oil
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts
Instructions
  1. Preheat oven to 375 degrees F.
  2. In a large bowl, combine dry ingredients.
  3. In another bowl, mash the bananas, add egg, add oil and vanilla; mix well. Stir into the dry ingredients just until moistened.
  4. Stir in the chopped nuts.
  5. Fill greased or paper lined muffin cups about half full.
  6. Bake at 375 degrees for 22-24 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool for 10 minutes in the pan.
  8. Remove from pan and completely cool on wire rack. Makes about 12 muffins.
