Strawberry Butter Cream Filling
  • 1 cup powdered sugar
  • 2 tablespoons butter, softened
  • 1-2 tablespoon milk
  • 2 tablespoons strawberry jam or jelly
  1. In a small bowl, beat together the butter and powdered sugar. Add the jam and 1 tablespoon of milk. Mix well.
  2. Add the extra tablespoon of milk only if the filling is too thick to mix. You want this to be reasonably thick. If too thin, let it stand for a couple of minutes or put it in the refrigerator. Place 1½ tablespoonfuls of filling on top of one cookie. Then place the second cookie on the filling. Slide the top off center just a bit so you can see the filling. Can fill about 12 cookies.
