Irish Soda Bread
  • 2 cups Baking Free Gluten-Free all purpose flour (248 g)
  • ½ cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1 cup buttermilk
  1. Preheat oven to 350 degrees F.
  2. Grease a 9 inch round cake pan.
  3. Combine the dry ingredients in a large bowl.
  4. In a separate bowl, whisk together the egg and buttermilk.
  5. Make a well in the center of the dry ingredients and pour in the wet.
  6. Stir just until combined. Pour into the prepared cake pan.
  7. Bake for 65 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool on rack for 10 minutes in the pan.
  9. Remove from pan and serve slightly warm. Cut into 8 pieces.
Make your own buttermilk anytime by combining 1 cup milk (or almond milk) and 2 tablespoon apple cider vinegar.  Let stand 10 minutes at room temperature.
