Everyone Loves to Have Homemade Biscuits–the Easy Way

I admit that I want all the convenience that gluten-full bakers have.  Having the homemade baking mix from yesterday’s post has added a new level of convenience for me.

Today I’m posting my recipe for cut out biscuits that just makes enough for 2-3 people.  Even my family is getting smaller.  With everyone having so many after-school sports and meetings, evening civic meetings and just other social engagements, sometimes I find that I’m cooking for just a few people.  Here is a great recipe that makes 5-6 biscuits–just right for a smaller group.  And it doubles well if you need more!

These are great just the way they are but if you want to, you can spread melted butter and an herb on them as they bake and make them even more spectacular!

Biscuits for Two–Quick and Gluten Free Using the Baking Mix
 
Ingredients
  • 1¼ cup homemade baking mix (recipe posted June 29)
  • ½ cup milk
Instructions
  1. Heat oven to 450 degrees F. Stir ingredients until soft dough forms.
  2. Turn onto surface dusted with additional baking mix. Knead a couple of times to incorporate a little more mix into the dough. Pat dough into a circle about 1 inch thick. Cut with 2½ inch cutter. Do not twist--press straight down. Should make 5 to 6 biscuits.
  3. Place on ungreased baking pan. Bake 8 to 10 minutes or until golden brown. Serve warm.
