Gluten-Free Bread made in Cuisinart Breadmaker

It’s Summer and it’s hot.  I was going to stop posting bread recipes because baking them heats up the kitchen so much.  To be honest, I was thinking about you and your kitchen, as I have to keep on baking to prepare for my Fall blogs and recipes.  Then I got an email requesting this recipe because she could bake the bread later in the evening when it’s cooler! That got me thinking.  I’m not the only one baking in the Summer! I guess if you are gluten-free and prefer what you can bake over what you can buy, you bake when you have to!

For that reason, I’m very glad to post this recipe for bread baked in a Cuisinart breadmaker.  If you haven’t tried bread in the breadmaker yet–this one is for you!  Here are a few things you should know about gluten-free baking in a breadmaker.  Gluten-free bread should only have one rise.  If you follow a regular recipe, let it rise, punch it down and set it for a second rise, you will be disappointed.  It just doesn’t rise well a second time.  Cuisinart has a Gluten Free mode which handles the dough with only one rise.  If you don’t have this machine, check you instructions to see if you have control over the number of rises, or can you manually program the machine for dough making, and then to go straight to rising and baking?  I find that gluten-free baking in the breadmaker also needs to a bit longer because of the moisture content.  That is why the recipe calls for settings for a 2 pound loaf and a dark crust.  It comes out golden.  Take that into consideration too.

Making bread in the breadmaker is a plus for any busy gluten-free baker.  Happy gluten-free baking!

Gluten-Free Bread in Cuisinart Breadmaker
  • 1 cup milk (room temperature)
  • ¼ cup butter (melted and cooled to room temprature)
  • 2 large eggs
  • 3 cups Baking Free™ gluten-free All Purpose Flour (for best results weigh flour=372 g)
  • 1 teaspoon xanthan gum (flour has enough for most baking, but bread needs this addition)
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • ¼ cup sugar
  • 2¼ teaspoons yeast (one envelope)
  1. Place all the liquid ingredients in the Cuisinart breadmaker bowl, fitted with the kneading paddle.
  2. Place the flour, xanthan gum, salt, baking soda and sugar in another bowl. Gently whisk the dry ingredients to mix evenly.
  3. Scoop the dry ingredients into the breadmaker bowl on top of the liquid. Do not mix with the liquid.
  4. Make a dent in the top of the dry ingredients and spoon the yeast into this dent.
  5. Place breadmaker bowl into the breadmaker as directed by manufacturer. Lock in place.
  6. Press the menu button to select a 2 lb. loaf, dark crust color and select the gluten-free program. This is not a 2 lb. loaf, but I find that this setting gives the best golden crust and best baking time.
  7. Press the Start/Stop button to begin program. While dough is being mixed, scrape the sides of the bread pan with a rubber spatula to fully incorporate ingredients.
  8. When cycle is complete, remove the bread from the bread pan and place on wire rack to cool completely for best slicing results. Makes 1 loaf.
