Almond Crumb Cakes


  • Whipped cream and almonds for serving


  • 1/3 cup homemade gluten-free baking mix (recipe posted June 29, 2015)
  • 2 tablespoons granulated sugar
  • 1 tablespoon butter (at room temperature)
  • 1/4 cup sliced almonds


  • 2/3 cups homemade gluten-free baking mix
  • 1/4 cup granulated sugar
  • 1/3 cup milk
  • 1 egg
  • 1 tablespoon butter (at room temperature)
  • 1/2 teaspoon almond extract


When working with homemade gluten-free baking mix, be sure the baking mix has only small clumps.  Using your fingers, break up any large clumps before mixing with other ingredients.  Makes it easier to incorporate into a smooth batter.


Step 1
Heat oven to 350 degrees F. Spray two 10-ounce custard cups with cooking spray. In a small bowl, mix topping ingredients until large crumbs form. Set aside.
Step 2
In a medium bow for a stand mixer, beat all cake ingredients on low until well blended. Batter will be slightly thin. Divide evenly between the two custard cups. Top each with topping mixture.
Step 3
Bake 30-35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove cakes from custard cups. Serve warm or cool topped with whipped cream and a sprinkle of almonds. Makes 2 individual cakes.
