Apple Cobbler and Sweet Sauce


Apple Filling

  • 1/2 cup sugar
  • 2 tablespoons Baking Free™ gluten-free All Purpose Flour
  • 4 firm apples, peeled and cored, cut into chunks (I used Granny Smith)
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger


  • 1 1/2 cup baking mix
  • 1/2 cup milk


  • 1 egg
  • 1 cup sugar
  • 2 tablespoons milk
  • 2 tablespoons butter


Apple Filling
Step 1
Prepare 8-inch square cake pan by spraying with cooking spray. Core and peel apples--I used 4-5. Cut into chunks. While doing this I always put the cut apples in water with a little lemon juice to avoid the apples darkening. When all are done, drain. Put apples, flour and spices in a medium bowl and gently mix to cover apples. Spread evenly in baking pan. You might want to dot the apples with bits of butter--optional--using about one tablespoonful butter.
Step 2
Prepare cobbler topping by pulsing the baking mix and milk in a food processor. It should combine into a loose batter. Drop by tablespoonfuls onto the top of the prepared apples. Bake at 425 degrees for about 10-15 minutes. Until biscuits are browning lightly. Remove and let stand while you prepare the sauce.
Step 3
In a double boiler beat one egg with one cup sugar. Add the milk and stir. Place over boiling water and add the butter. Heat to a boil. Stir occasionally. Sauce will come together and thicken. Serve warm over apple cobbler.
