Cookie Butter & Brown Sugar Streusel Bars

Ingredients

Bars

  • 1/2 cup unsalted butter (melted and cooled)
  • 1 large egg
  • 1 cup brown sugar (packed)
  • 2 teaspoons vanilla
  • 2 teaspoons ground cinnamon
  • 1/3 cup GF cookie butter, heaping (recipe posted July 28)
  • 3/4 cups Baking Free™ gluten-free All Purpose Flour
  • pinch of salt

Streusel Topping

  • 1/4 cup unsalted butter (softened)
  • 1/2 cup Positively Free™ Instant Oats
  • 1/4 cup brown sugar (packed)
  • 2 tablespoons granulated sugar
  • 2 tablespoons Baking Free™ gluten-free All Purpose Flour
  • 1-2 teaspoon ground cinnamon (to taste)

Drizzle

  • 1/4 cup powdered sugar
  • 1-2 teaspoon water

Directions

Bars
Step 1
Preheat oven to 350 degrees F. Line an 8" x 8" pan with aluminum foil , spray with cooking spray. Set aside.
Step 2
In a microwave safe bowl, melt 1/2 cup butter, about 1 minute. Allow the butter to cool a couple of minutes.
Step 3
To the cooled, melted butter add the egg, 1 cup brown sugar, vanilla, 2 teaspoons cinnamon, and whisk or stir untl smooth.
Step 4
Add the heaping 1/3 cup of cookie butter and stir to incorporate.
Step 5
Add the flour and pinch of salt. Stir until combined.
Step 6
Pour batter into prepared pan, smoothing the top lightly with spatula. Set pan aside.
Streusel Topping
Step 7
In the same bowl where you made the batter (assuming you scraped it fairly clean with the spatula) add all the streusel ingredients, and work the mixture with a spoon, a pastry cutter or your hands until small pebbles form. It looks like there is quite a lot, but use it all.
Step 8
Bake for about 30 minutes, or until center is set and not jiggly, and the edges are set and pull away from the sides of the pan slightly. The edges are the best clue. These bars have a chewy center but you can also test with a toothpick in the center, It should come out mostly clean.
Drizzle
Step 9
Allow bars to cool in pan for at least 30 minutes before removing from pan, slicing and serving. To make drizzle, mix powdered sugar and water together in a small bowl. When icing is mixed but still soft enough to drizzle on the cooled bars. Makes 9 generous bars.
