Dutch Baby

Step 1

Place 3 tablespoons butter in 10-inch cast iron skillet and set it in a 425 degree F oven. |

While the butter melts, mix the eggs at high speed in a blender for one minute. With the blender still running, gradually add the milk and then the flour. Scrape the sides and blend for 30 seconds after everything has been added. |

Carefully remove the heated pan from the oven. Swirl the melted butter around the pan and up the sides a bit. Pour in the egg mixture. |
Step 4

Place the filled pan back in the heated oven (425 degrees F) and bake until puffy, about 20 minutes. |
Compote

While the Dutch Baby is baking, assemble the compote. Peel and slice the apples. Place remaining butter, brown sugar and apple slices in a medium sauce pan. Cook over medium heat until the brown sugar has dissolved and the butter has melted. Stir occasionally. |

Once the sugar and butter are dissolved, add the vanilla and cinnamon. Stir to combine. Cook 6-8 minutes longer. The sauce will thicken as it cools slightly. |

Once the Dutch Baby is done cooking, remove from the oven and top with the compote. This can serve 3-4 people. Carefully cut into pieces making sure everyone gets a portion of the Dutch Baby and some of the compote. |
