Step 1

Combine warm milk, sugar and yeast in bowl, set aside for about 10 minutes. It will get bubbly. |

Combine flour, xanthan gum and salt in large stand mixer bowl. |

With mixer on low, gradually add yeast mixture to flour until it combines. |

Add butter, eggs and oil. Beat until well mixed, scraping bowl occasionally. |

Increase speed and beat for about 3 minutes until batter is very smooth. |
Step 6

Prepare baking sheet with parchment and 5 English muffin rings. Spray with baking spray or oil. |
Step 7

Put a scant 1/2 cup of batter in each ring. Put a little hot water in a cup and stir with spoon. Using the back of the damp spoon, smooth the top of each bun. |

Loosely cover with greased plastic wrap and a clean kitchen towel. Place in a warm spot and let rise for about 30 minutes . Buns should be above the top of the rings. |
Step 9

Heat oven to 350 degrees F. Remove covering and bake about 30 minutes or until tops are golden brown. |
Step 10

Let buns rest on baking sheet for a few minutes to cool slightly. As soon as you can handle them, remove the rings. Cool completely on baking racks. Makes 5 hamburger rolls. |
