Gluten-Free Impossible Taco Pie

Ingredients

  • 1lb lean ground beef
  • 1 Medium onion, chopped (1/2 cup)
  • 1 packet taco seasoning, gluten-free (or homemade taco seasoning for 1 pound of meat)
  • 1 can chopped green chilies, drained (4.5 oz)
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup gluten-free baking mix (reccipe posted June 29) (https://gfbakingfree.com/recipe/homemade-gluten-free-baking-mix/)
  • 3/4 cups shredded Monterey Jack or Cheddar cheese

Directions

Step 1
Heat oven to 400 degrees F. Grease a 9-inch pie plate. Cook ground beef and onion in a skillet over medium heat. When meat is brown, drain and stir in dry taco seasoning. Spoon meat mixture into the prepared pie pan. Top with green chilies.
Step 2
Blend milk, eggs and baking mix in a blender for just a minute or so. Pour over meat in pie plate.
Step 3
Bake about 25 minutes . Sprinkle with shredded cheese and return to oven for 5 minutes to melt cheese. Cool 5 minutes. Cut into 6 pieces and serve with salsa and sour cream if desired.
