Orange Oaties
Ingredients
- 3/4 cups honey
- 1/2 cup orange juice
- 1 cup Postitively Free™ Instant Oats (toasted, if desired)
- 1 1/2 cup Baking Free™ gluten-free all purpose flour
- 1/2 cup light brown sugar
- 1 orange (just the zest, finely shredded)
- 1 teaspoon baking soda
- 1/2 teaspoon xanthan gum
Note
These cookies stay slightly sticky. Every cookie recipe I've ever baked with honey stay a little sticky. Taste great though!
Directions
Step 1 | |
Preheat oven to 350 degrees F. Line two baking sheets with parchment paper. Set aside. Toast oats in a dry frying pan 1/2 cup at a time until golden. | |

Put the honey and orange juice in a small pan and simmer over low heat for 8-10 minutes, stirring occasionally, until the mixture is thick and syrupy. | |

Put the oats, flour, sugar, xanthan gum and orange zest in a bowl. Mix the baking soda with one tablespoon boiling water and add to the flour mixture together with the honey orange syrup. Mix well with a wooden spoon. | |
Step 4 | |
Place spoonfuls of the dough on the prepared baking sheets, spacing slightly apart, and bake for 12-14 minutes or until golden brown. Leave to cool on the sheets for 7 minutes before transferring to a wire rack to cool completely. Makes about 16 cookies. |
