Step 1

Heat oven to 400 degrees F. In a 4-quart saucepan, mix 1/3 cup sugar, the cornstarch and cinnamon. Stir in the sliced peaches, water and lemon juice. Heat to boiling, stirring constantly. Boil and stir 1 minute. Pour into ungreased 9-inch square (2 quart) glass baking dish. |

In a medium bowl, stir gluten-free baking mix, 1 tablespoon of the sugar, milk and melted butter until a soft dough forms. |
Step 3

Drop dough by 6 tablespoonfuls onto the hot peach mixture. Sprinkle the remaining 1 tablespoon sugar over dough. |

Bake 20-25 minutes or until golden brown. Sere warm or at room temperature with vanilla ice cream or whipped cream. Serves 6-8. Makes 1 9" x 9" cobbler. |
