Peach Cobbler using GF Baking Mix

Ingredients

  • 1/3 cup sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon ground cinnamon
  • 6 peaches, peeled and cut into 1/2 inch slices (about 6 cups)
  • 2 tablespoons water
  • 2 teaspoons lemon juice
  • 1 cup homemade GF baking mix (posted June 29)
  • 2 tablespoons sugar
  • 1/3 cup milk
  • 1 tablespoon butter, melted
  • whipped cream, if desired

Directions

Step 1
Heat oven to 400 degrees F. In a 4-quart saucepan, mix 1/3 cup sugar, the cornstarch and cinnamon. Stir in the sliced peaches, water and lemon juice. Heat to boiling, stirring constantly. Boil and stir 1 minute. Pour into ungreased 9-inch square (2 quart) glass baking dish.
Step 2
In a medium bowl, stir gluten-free baking mix, 1 tablespoon of the sugar, milk and melted butter until a soft dough forms.
Step 3
Drop dough by 6 tablespoonfuls onto the hot peach mixture. Sprinkle the remaining 1 tablespoon sugar over dough.
Step 4
Bake 20-25 minutes or until golden brown. Sere warm or at room temperature with vanilla ice cream or whipped cream. Serves 6-8. Makes 1 9" x 9" cobbler.
