Pretzel Bites with Honey Mustard Dip


  • 3 1/4 cups Baking Free™ gluten-free All Purpose Flour
  • 1 teaspoon xanthan gum
  • 1/3 cup dry milk powder
  • 3 teaspoons instant yeast
  • 1 teaspoon baking powder
  • 1 tablespoon light brown sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon cider vinegar
  • 2 tablespoons unsalted butter, at room temperature
  • 2 egg whites, at room temperature
  • 1 1/2 cup warm water (about 95-100 degrees)
  • Baking soda bath (6 cups water + 1 tablespoon baking soda + 1 teaspoon salt)
  • Coarse salt for sprinkling


  • 1/2 cup Dujon mustard
  • 2 heaped tablespoons whole grain mustard
  • 1/2 cup honey
  • 3 tablespoons mayonaise
  • lemon juice


Step 1
Prepare baking sheets with parchment paper. Set aside.
Step 2
In the bowl of a stand mixer, place flour, xanthan gum, milk powder, yeast, baking soda, salt and sugar. Mix together. Add the egg whites, cider vinegar and butter and mix to combine. With the mixer on low, stream in the water. Once the water is combines, turn the mixer up to high and beat for about 3 minutes. The dough will be wet. Add more flour by the tablespoon until the dough pulls away from the bowl (comes together). It will still be a loose dough.
Step 3
Place the dough on a floured surface and dust the top with flour. Cut dough into 3 pieces and place on one of the baking sheets. Cover with floured plastic wrap and place in a warm area to rise for about 30 minutes.
Step 4
When the dough is nearing the end of the rise, preheat oven to 375 degrees F. And prepare the soda bath in a large, heavy pot. Bring the soda bath to a boil over high heat. While waiting for the soda bath to boil, shape the dough.
Step 5
With a scraper or sharp knife, dusted with flour, cut each ball of dough in half and roll into a long tube about 1-inch in diameter and 10-inches long. cut each tube into bites about 1-2 inches long. Dust the tops of the bites with more flour and cut 2 slashes in each bite about 1/8 of an inch deep with a sharp knife.
Step 6
Place as many bites of dough into the boiling soda bath without crowding. Allow to boil for 30 seconds and flip over for another 30 seconds. Remove them with a strainer and place on baking sheets with the slashes on top.
Step 7
Place the pretzel bites in the center of the preheated oven and bake for about 30 minutes, until golden brown. Cool on the pan before serving. Makes about 30-45 pretzel bites.
Step 8
Mix together the ingredients in a small bowl. I add lemon juice to taste. Serve along side the bites as a dip. Makes about 1 cup dip.
