Strawberry Butter Cream Filling

Ingredients

  • 1 cup powdered sugar
  • 2 tablespoons butter, softened
  • 1-2 tablespoon milk
  • 2 tablespoons strawberry jam or jelly

Directions

Step 1
In a small bowl, beat together the butter and powdered sugar. Add the jam and 1 tablespoon of milk. Mix well.
Step 2
Add the extra tablespoon of milk only if the filling is too thick to mix. You want this to be reasonably thick. If too thin, let it stand for a couple of minutes or put it in the refrigerator. Place 1 1/2 tablespoonfuls of filling on top of one cookie. Then place the second cookie on the filling. Slide the top off center just a bit so you can see the filling. Can fill about 12 cookies.
